The best thing about this tool is that it is very user friendly and very helpful in visualizing the requirement of the project in the graphical and hierarchy form. In case you have a LOT of processes and know-how of these processes are not documented, thus making your company depend on specific people, Star UML is a good tool to document processes that manage complex relationships between functions, people, IT systems, input and output documents, and scenarios. It is also good for reporting, for example, once you complete documenting all your processes, you can simply get a response to "in what processes is Excel used?" because Star UML will give you just that, and is capable of more.
