Instead of by columns, can I make it like 3 panels just like the old papers?

Yes, ReadCube Papers offers two different view styles: List View and Table View. With Table View, you can customize the columns and move them around so you can view your library the way you want. This support article covers how to switch between each view: https://rdcu.be/bZmHw
